Great Steaks, Celebrity Diners, and a Touch of History. That’s Gallagher’s. The most casual of New York steak houses, with its checkered tablecloths and photos of sports greats on the walls, Gallagher’s makes no pretensions. From the moment you walk through the door, time stands still and customers are pampered and the food improves with each visit.

For starters, there is a first rate shrimp cocktail (or split the smallest lobster, which start at two pounds). You won’t be disappointed with the famous dry-aged steaks (especially the melt-in-your-mouth Sirloin);.The Roast Beef is the best in town. All potato dishes and the fabulous onion rings are recommended.

Vegetables, whether steamed or creamed, are terrific and the wine selection is easily accessed and affordable, with an abundant selection available by the glass.(There is an excellent choice of single malts). You won’t complain about the  Rice Pudding, creamy Cheesecake or wonderful Key Lime Pie. Add the easy-going service and you’ll agree that Gallagher’s is a heavy-hitter in the steak house league.

Gallagher’s Steak House owner Marlene Brody is introducing “the next generation of jazz musicians” to New Yorkers, and at the same time enhancing the dining experience at the Theater District mainstay restaurant with the on-going live jazz entertainment series, every Friday and Saturday night. The program, which was introduced in mid-August, will continue in 2010. Rhys Tivey, an 18-year-old up-and-comer, spearheads the quartets of young musicians showcasing their talents at Gallagher’s two nights a week. The performances are from 9 p.m. to midnight.

Mrs. Brody, who is also the owner of Gallagher’s Stud located in upstate Ghent, New York, has long been a supporter of the Empire State Youth Orchestra, a group through which she met upstart Tivey. “The goal is for Gallagher’s to become a stepping stone for young artists, and give fine up and coming musicians the opportunity to earn money in the heart of the entertainment capital of the world through their musical talents,” says Mrs. Brody.

Tivey’s group has been joined by such notables as Gilad Heckselman (guitar), Francois Moutin (bass), Andy Galore (electric bass), Ross Pederson (drums), Alexis Quadrado (bass), Anthony Pinciotti (drums) and Aviv Cohen (drums) The live jazz has been embraced by Gallagher’s patrons and jazz aficionados alike. Opening night saw legendary Knicks Hall of Fame guard and music impresario, Earl “The Pearl” Monroe, and his wife, Marita Greene, stop by for a visit.

Background

Gallagher’s New York Steak House, Inc. (“Gallagher’s Steak House”), was established in 1927 by Helen Gallagher and Jack Solomon. It was Broadway’s first steak house and the inventor of the “New York Strip” steak.

Gallagher’s Steak House was designed to be distinct from the formal, plush elegance adapted from Europe that was the restaurant decor style of 1927. Instead, the restaurant employed basic style elements: plain plank floors, wood-paneled walls and red checked tablecloths. The look simultaneously incorporates the feel of a speakeasy.

In 1927, with Prohibition hanging heavily over the land, Gallagher’s was the first speakeasy -a Runyonesque gathering place for gamblers, sports figures, and showbiz folk and other stars of the Broadway firmament., whose photos adorn the walls.

Helen Gallagher knew how to lure celebrities; she was something of one herself. Until the mid-20’s, she had been a Ziegfeld Girl and the wife of a household name, Ed Gallagher, who with Al Shean made up the comedy team of Gallagher and Shean. They were the leading vaudeville and recording duo of their day until the death of Ed Gallagher. Helen then married Jack Solomon, a colourful restaurateur/gambler with a loyal and large following among what was then called the sporting element.

Helen died and Jack Solomon married Irene Hayes. Hayes was the owner of the top floral design shop in the city. Soon after Solomon dies and Irene Hayes is sole owner.

In 1964, Mrs Hayes decided to sell the restaurant; out of hundreds of potential buyers, she selected Jerome Brody. Mr. Brody was a distinguished restaurateur, and the originator of the famed Restaurants Associates who’s accomplishments included the Four Seasons, the Forum of the Twelve Caesars, the Fonda del Sol (designed by Alexander Girard) and many other renowned, successful restaurants in New York City. In 1963 Jerome Brody started the Brody Corp. he restored the Rainbow Room to its former glory, created: L’Etoile (designed by Alexander Girard), Raffles (a private club designed by Cecil Beaton), the ground floor in the new CBS building (designed by Kevin Roche)

Upon buying Gallagher’s in 1964, Jerome Brody had ingenuity and foresight to enclose the meat aging room that was at the front of the restaurant and installed glass windows so that the contents could be seen from the street. Brody stocked it with the best USDA Prime Beef and dry-aged it to 28 days at a constant 36 degrees insure tenderness. This practice is still followed to this day.

Gallagher’s is celebrating its 80th anniversary – 44 of them under the guidance of Jerome Brody, the decor remains exactly the same as it was and so does the extraordinary mix of our clientele- showbiz people from all over the world, sports figures in the boxing, horse, football, baseball, basketball and hockey world, and business professionals.

In 2006 Jerome Brody’s widow Marlene commissioned , Pierre “Peb” Bellocq to paint a mural depicting some of the many celebrity figures that have frequented Gallagher’s over the years. Images depicted include Bill Clinton, Sarah Jessica Parker, Robert De Niro, Joe DiMaggio, Mohammed Ali, John F Kennedy and Marilyn Monroe.

The knowledge and know-how that Jerome Brody brought to Gallagher’s will live forever as a great restaurant landmark in New York City.

HISTORY ~ INSPIRATION BEHIND THE NAME:
TEQUILA SEMENTAL is the origin of a relationship and the inspiration for a brand of ultra premium
tequila, from proprietor Efrain Lopez Gurza. As a child, Efrain encountered one of his father’s Sementals
at his hacienda in the town of Torreon, Mexico. Seven year old Efrain had overhead his father talking
about the new Semental that has just arrived at their hacienda. Being an inquisitive child, he hurried to the
arena where the new Semental was waiting for his father’s inspection. Arriving before his father, Efrain
climbed the fence, only to lose his balance and fall into the ring. The Semental moved swiftly to where
Efrain lay in the ring, and gently nudged him to safety outside of the ring itself. This bull proved to be a
favorite in not only the father’s life, but also in Efrain’s, for the qualities that all Sementals represent;
belonging to a select caste of supremacy, demonstrating braveness in light of all the significant
competition, working very hard to establish the integrity of being the finest, and proving that this son is
every bit as celebrated as his father had been in life.

Tequila Semental Master Distiller and Blender
How was it discovered that the Agave plant could produce
such a marvelous beverage?
The Agaves (maguey) is a desert plant that has to thrive in a very challenging
environment. It stores its food reserves in a way that predators are not attracted to
it. Its physical appearance, including a bayonet-like spike, also provides protection.
It is not easy to reach and it does not produce palatable juices or fruit. So, again,
how could anyone develop the idea of making a drink from this plant?
It is believed that a forest fire occurred in the Jalisco region of Mexico, and the
agave plants were cooked in the heat of the fire. The Indians living in this area
noticed that a sweet smell of caramel filled the air, coming from the core of the
plants that stood among the ashes. Upon tasting these agaves, the Indians found
them sweet and pleasant to eat, and this is how the first two steps of the process
were born.
How was this complex process developed?
To process the tequila maguey, first the Indians removed the pulpy spikes from the
plant, leaving the head, called the “piñas.” Once they obtained the heads, they put
them in earth pits covered with maguey leaves and built a fire on top. This
converted the bitter and hard heads into a sweet, flavorful, and meaty product they
used as candy. They did not realize that alcohol could be made from the candy’s
sugar.

Again, a fortuitous event must have occurred. Somebody crushed the meaty pieces
and put them in water to extract the sugar, intending to prepare a delicious and sweet
drink. But, surprise, the juice started to produce gas bubbles as if it was boiling. This
was fermentation! The microscopic yeast present in the air converted the sugar into
alcohol and carbonic gas. The third step to producing tequila was born. Now the
liquid tasted differently; it had lost its sweet taste, and now possessed more vivid and
appealing aromas. The Indians also noticed a very different effect on those who drank
it.
All this occurred in pre-Hispanic land, which is now referred to as Jalisco state. When
the Spanish conquerors arrived, they tasted the “mescal wine” and, already having
knowledge of the art of distillation, they continued to make this spirituous drink from
the Agave plant.
Today these four basics steps are still followed to make tequila: harvesting, cooking,
fermentation, and distillation.
Tequila and Mescal were made in the same way until the early years of the twentieth
century, when the producers from the Tequila town in Jalisco started to modify the
process. They introduced modern techniques which made the beverage making
process much more hygienic, and allowed for the production of a unique beverage that
would quickly come to be in a class by itself. It was at this point that this beverage was
named for its native town of Tequila.
It is beneficial to know that just as Cognac is a brandy made in the French region of
Cognac in La Charente, so Tequila is a mescal that is as different from the others as
Cognac is from other brandies. Because of Tequila’s raw material and the special
characteristics imparted to its heads, or “piñas,” by our “terroir,” meaning the soil
and climate of the Tequila and nearby Amatitan and Tequila valleys, there is no other
mescal like it.
Since we are only heirs of these ancient traditions which have merged many cultures,
including Indian, Spanish, Arabian, and French, we are obligated to maintain a very
careful watch over our process. We will improve where it is appropriate, but we will
also maintain the very same processes that have made tequila a unique product and
our brand, Semental, the leader in taste and quality.

Semental Explained
Why a Bull
The bull that we have chosen is not a mere bull. He is the bravest bull of all, belonging to a very special caste: The
Fighting Bull. An original species from Spain, Bos Taurus Ibericus is born and raised only to demonstrate its
braveness in the bullring. The selection process begins with the cows of this species. These cows must first
demonstrate their own braveness by fighting in small rings at ranches, where they are raised, in order to gain the
privilege of bearing offspring. Owners who witness this selection process will then choose 40 to 50 of the strongest
and most aggressive females that will be mated with a SEMENTAL bull.
How a Semental is Chosen
In the raising of these brave bulls, detailed records are kept, in order to register the father and mother of each bull
and cow born at each ranch. This is the animal species that has the oldest tradition of keeping records, in order to
establish the pedigree of every individual bull and cow.
When the bulls are three years old, they are subjected to a trail that will define their destiny, known as La Tienta.
Bulls that are deemed as being extraordinary, or “the chosen bulls,” never go into the ring. They are kept for breeding
purposes. This is how the beauty and braveness of the SEMENTAL herd is maintained at a superb standard of
the highest pedigree.
Another Scenario For Selecting a Semental

A selection of Semental bulls also occurs during a bull fight (the most complete and definitive Tienta). Matadors
and bulls are paired by their skill and bravery. When the best Matadors go into the bull ring with the best of the best
of the bulls, the bull fight is carefully observed by the audience. If it appears that both the bull and bullfighter are
equally paired, and have endured an excellent fight, the people who have come to the bull fight will call for the bull
to be pardoned from death and be spared, since he gained the right to become a SEMENTAL. When this happens,
he will go to a ranch to live a quiet life from that point forward, paired now with his harem of 40 or 50 cows. These
are the greatest of the SEMENTAL bulls, which are courageous, hard working, and supreme above others.
In ancient times, land owners protected their agave fields with the bravest and most powerful bulls: SEMENTALS.

The Oak Rood of the fabled Algonguin Hotel gets our award as the best cabaret room in New York and the nonpareil duo of vocalist Sandy Stewart and jazz pianist Bill Charlap are certain to chase the post-holiday blues away with their new Oak Room show, “Somebody Loves Me,” in a limited two week run January 5-16. The pair–who happen also to be mother and son–will perform “Little Girl Blue,” “I’m Old Fashioned,” “In Love in Vain,” “Isn’t It A Pity,” “Who Cares,” “Autumn in New York” and other gems from the Great American Songbook. Bill’s solos will be different for each show. Shows are Tuesday through Thursday at 8:30 and Friday and Saturday at 8:30 and 11. Sandy Stewart is best known for the Grammy-nominated song, “My Coloring Book” (she lost to Ella Fitzgerald’s “Mack the Knife”). She began her performing career at 15 in her native Philadelphia and soon moved to New York for a variety of television gigs with Merv Griffin, Dick Van Dyke, and as a regular with the Perry Como show while also touring with Benny Goodman. After marrying Broadway composer Moose Charlap, she retired to rear sons Bill and Tom. Later, she resumed singing in clubs and on recordings and voiceovers. Sandy’s recent CD with Bill, “Love Is Here to Stay,” for Blue Note, was greeted with universal acclaim.

Bill Charlap began playing piano at age three. He later studied classical music but remained most interested in jazz, and worked with Gerry Mulligan, Benny Carter and Tony Bennett, among others. In a crowded field Bill is considered one of the world’s best jazz pianists. With Peter Washington (bass) and Kenny Washington (drums) he has recorded six albums as a leader for the Blue Note label, including two Grammy-nominated CDs: “Somewhere,” featuring the music of Leonard Bernstein and “The Bill Charlap Trio: Live at the Village Vanguard.” He is Artistic Director of New York’s 92nd Street Y “Jazz in July” series, and in 2008 toured worldwide on behalf of Blue Note’s 70th anniversary.
