amed after the cherished, coarse salt from Brittany, Fleur de Sel is a magical little restaurant with clean soothing decor, originally designed by owner/chef Cyril Renaudís and his father. Throughout the past five years, since it opened, Fleur de Sel has undergone many changes. The most recent change is the renovation that took place in December 2004. Under Chef’s artistic eye, the room is adorned with his original paintings and offers a new warm color palette, comfortable banquette seating and soft amber lighting, lovely floral arrangements and a custom-made table in the center of the room to hold customers wines.
Fleur de Sel offers personalized pleasures, including food, equal to the best in New York and service that manages to be at once omnipresent and seamless, and an extraordinarily accomplished, all-female management team. The team includes General Manager Elissa Crum, the magnificent Sommelier Janine Lettieri and Assistant General Manager Xenia Buxo. We advise you to go with the Six-Course Tasting Menu, which offers two choices for each course. (Wasn’t Wayne Nish the first to offer “Dual Tasting Menus? Exquisite offerings might include gossamer lobster with Asian Pear and Black Truffle Mayonnaise, a Duo of Sullivan County Foie Gras and Quince Jelly, Braised Rabbit Leg with Currents and Saffron Sauce, Poached Hamachi with a delectable Horseradish Cream sauce, Lemon Sole with Chestnuts, Cauliflower and Truffle Puree, Red Mullet, Chive Gnocchi and Shrimp Jus, Fennel and Pistachio Crusted Venison Loin, with Venison Sausage and Yukon Gold Gratin and a glorious Veal Breast and Tenderloin with Seared Foie Gras and Smoked Morel Sauce. Wonderful Artisanal American Cheese precedes two desserts composites: Raspberry Feuillete with Banana Mousse and Gaufrette Au Chocolate with Hot Chocolate Tart Soufflé, an awesome dessert choice. The Menu changes every day depending on what the market offers. Fifty is the number of wine selections on Fleur de Sel’s original wine list – which was one page long – and one-thousand is the number of selections guests can currently peruse on today’s forty-one page wine list. It is not a small feat for a restaurant to amass such an interestingly broad selection of fine wines in five years. At the five-year mark, Sommelier Janine Lettieri has added wines from around the world and significantly increased the restaurant’s older vintage selections. Focusing her sights on the future, Sommelier Lettieri’s constant efforts are focused towards further expanding the list to offer a vast range of selections for every guest to enjoy. We loved the Petalos de Bierzo from Alvaro Palacios' Descendientes de J. Palacios project in Bierzo. A Bargain at $45, it carries subtle fruit and is very food friendly.
