After 20 months of complete renovation, Le Richemond re-opened its doors on the 21st of September 2007.

Recently acquired by The Rocco Forte Collection, this prestigious five star hotel has held its prime position facing the famous Brunswick Gardens and overlooking the Alps, Lake Geneva, and the Old Town Cathedral for over 130 years. Just 6km from Geneva Airport and with the business and shopping districts of this sophisticated city only walking distance away, it is ideally located for business meetings and conferences. The Official Opening of Le Richemond:

Following a 20-month renovation, the official opening of Rocco Forte’s Le Richemond took place on 26th September in the presence of Sir Rocco Forte, the Vice-President of the Administrative Council Mr Manuel Tornare, and the Administrative Councillor Mr Pierre Maudet.

Geneva was bathed in sunlight during the opening, which took place just before midday on the steps of Le Richemond. Crowd of journalists, representatives of the various departments of the City of Geneva, as well as the tradespeople who had worked on the renovation of one of the best-loved institutions in the European hotel world since the end of the 19th century.

“It is one of our dearest wishes that Le Richemond regains the place that it has always held in the social and cultural life of the city of Geneva,” said Sir Rocco. “This hotel belonged to the Armleder family for four generations and we would like to pay homage to them here; I should add that today the hotel passes into the hands of another family, the Forte family, and we hope to maintain the unique atmosphere that has always reigned here. The renovation of this legendary hotel raises the profile of Geneva Harbour, with Le Richemond certainly being one of the most beautiful buildings in the area.”

The dignitaries then moved into the lobby of the hotel where a commemorative plaque of the inauguration was unveiled and Father Tony conducted a blessing. The guests were then able to sample the delicious cooking of Executive Chef Pietro Amato while enjoying cocktails in The Ballroom. Previously called Le Grand Gentilhomme, The Ballroom has been completely renovated, along with the rest of the hotel. However, it has kept its impressive atmosphere, its splendour accentuated by trompe-l’oeil paintings, mirrored walls, a magnificent parquet floor and, for the perfect finishing touch, superb Murano glass chandeliers.

Le Richemond, built in 1875, prides itself on having an incomparable location in the centre of Geneva, with superb views over Lake Geneva and the Alps. This Genevese institution re-opened its doors in September 2007 and has 109 rooms, of which 26 are suites, a restaurant, a bar, three flexible meeting spaces, a ballroom, as well as a spa and fitness centre. The Sapori restaurant presents its new menu
The flavours of Italy transported to Geneva

One of the flagships of the Rocco Forte Collection, Le Richemond was bound to offer not a mere smattering of Italian cuisine, but a cornucopia of flavours and colours. To ensure outstanding quality is the hallmark of the new menu, the help of Chef Fulvio Pierangelini, recently crowned Italy’s best chef, was enlisted. Produces and recipes have been harvested up and down Italy; all are prepared so as to preserve their original qualities, but have an extra touch of fantasy which creates the most unforgettable harmonies.

A journey for the senses

Sapori’s new menu is a journey trough Italy’s flavours, with traditional dishes revisited and creations based on produces selected with fastidious rigour.

The journey starts gently, with appetizers which look familiar… until one bites into them. Like these olives ” All’Ascolana “, the recipe of which was probably invented by the Etruscans. Fat, juicy green olives - from a variety endemic to the Marche Region (central Italy) - are stuffed with ham, parmesan and pine kernels, and then rolled into breadcrumbs, before being browned in a pan with olive oil. Or you may take the “timbale” of aubergines “parmigiana”; the Chef transformed this Sicilian dish into a delicate composition where thin, moist slices of eggplant alternate with mozzarella and basil-perfumed tomato sauce.

After having been briefly placed under the grill, the top of the edifice becomes crunchy, while the rest melts splendidly in the mouth.
And this is only a beginning… The journey then goes on to deep fried calamari and thin slices of violet artichokes, served with a sweet-sour sauce, simply made of white vinegar and sugar syrup. Then comes the sea bass platter, where the fish is cooked in two different ways, as are the zucchini which complement the fish.

Among the meat dishes, one falls for the “veal variation” which lays side by side a thick and juicy fillet, a veal cheek that melts in the mouth and grilled liver, the precise cooking of which is specified by the guest upon ordering. This dish is accompanied by braised radicchio from Treviso, dressed with balsamic vinegar - which adds a note which is both sweet and astringent - and white polenta, the finest there is, straight from Venice.

And nothing has been said so far of the tomato risotto with a creamed buffalo mozzarella…. well, that’s because there nothing to say: it only needs to be relished in near-religious silence…

The research for flavours extends to the variety of breads which are proposed, such as the bread with squid ink, that with red onion or with aniseed, all being recipes created by the Chef.

The high art of pasta

Not surprisingly, pasta has pride of place. Needless to say, they are home made. The dough is worked until the texture is right. As with all artefacts, the pasta are controlled manually, as they come out of the machine which shapes them; the quirky elements are discarded without a second thought!

In actual fact, Sapori proposes a whole range of pasta. For there are the pasta made with eggs, intended for the ravioli, for instance, and those suited to al dente cooking. And there are also the regional specialties, such as the gnochetti from Sardinia, small gnocchi made of pasta - rather than potato - which blend bread wheat, semolina and eggs, and are sprinkled of home-smoked ricotta. There are also the unusual - they feature a square cross section - spaghetti “alla chitarra” from the Abruzzo, which derive their name from the tool with which they are made, a wooden framework on which metal threads are stretched, which resembles a rectangular guitar.

Handpicked produces and wines

No effort has been spared to identify the best produces and the most reliable suppliers, to match permanently these high standards. Thus, Sapori has its buffalo mozzarella delivered twice a week from Italy. The meat and sausage specialties - such as the raw salami or the cheek of black pork from Sicily - all come from small local producers, selected by a specialised importer. The oil used by the Chef is selected from the best, in different regions: Tuscany, Umbria, Liguria, Apulia or Sicily.
This also holds true of the wines. With the help of two specialised importers - Caratello Vini and Ceresio Vini - Sapori offers wines which may be little-known, such as the Etna Rosso DOC, a small and recent production growing on the flanks of the volcano, or difficult to find outside their home country, such as the Vernaccia from San Gimignano (Tuscany), which blossoms on the aubergine timbale or the deep fried squids. There is also a Moscato Passito di Pantelleria, from the small, rocky island off Sicily, which elegantly accompanies the zabaglione of preserved pear and pear sorbet and exhales the warm atmosphere of this splendid part of Italy.

A gourmet ” dream team “

This new menu was born out the collaboration of Fulvio Pierangelini and Pietro Amato. Fulvio Pierangelini, of Roman origin, recently crowned Italy’s best chef, has been, for the past 20 years, the owner of the Gambero Rosso, situated in San Vicenzo’s harbour, Tuscany. Of worldwide acclaim, his restaurant boasts, among other distinctions, 3 stars in the Michelin guide. Reputed for his love of genuine produces, Pierangelini is inventive while at the same treating the products with the greatest respect. At the Sapori, he lent a hand to Pietro Amato, the Richemond’s young Executive Chef. The son of a cook, Amato retained from his travels overseas an interest in foreign culinary tradition and an appetite for experimenting with new combinations of tastes. Together, they have put together a dream menu, which allows the guest to embark on a journey throughout Italy, without leaving the shores of Lake Leman.

The Villa d’Este in Lake Como, with its near 500-year-old villa and 25-acre park set on the shores of the lake, acts as the base of operations for more than three days of sightseeing. A private lake cruise stops at Villa Carlotta for a tour and the Renaissance town of Bellagio for a stroll, followed by a day for independent exploration. After a transfer by private car to Venice’s Hotel Cipriani, a luxury estate opposite the Piazza San Marco, guests are taken in hand for an introduction to the many sites of the city and an excursion to the islands of Murano, also known as the Glass Island for its 700-year history of glass blowers, and Burano, known for its lacework.

The overnight journey to Paris is aboard the restored luxury carriages of the famed Orient Express, taking passengers back to a bygone era. After settling in at the Chateau of Les Crayères, renowned not only for its high standards of service but also for its three-star Michelin restaurant, guests will tour Reims. Highlights include the Cathedral of Notre-Dame de Reims, where French Kings were crowned, and its old town, and then venture off to the Champagne region to visit the vineyards, meet with a local producer and tickle the senses with a Champagne tasting.

The MV Cézanne serves as a floating hotel, set in the heart of Paris for a night, as guests take a tour of the City of Lights’ not-to-be missed sites – Notre Dame, the Louvre, Sacrè Couer, Champs Elysées and Eiffel Tower. From Paris the ship makes stops in Les Andelys with a tour of Richard the Lionheart’s Chateau-Gaillard; Caudebec-en-Caus, where an optional excursion to the Landing Beaches of Normandy is offered; and Honfleur, whose unusual light inspired native son, Eugéne Boudin, and others, including Monet, Renoir and Sisley, to experiment and give the world Impressionism. In Rouen, the half-timbered city where Joan of Arc was burned at the stake, guests visit the Gothic Cathedral Notre Dame and old town; and in Vernon, opposite Giverny, guests are take a tour of the restored home of Monet, his lily ponds, Japanese Bridge and gardens.

The fully air-conditioned MV Cezanne, completely renovated in 2006, is a deluxe ship with 50 large staterooms, sun decks and stylish public rooms that include an elegant restaurant, bar, lounge and library. Dining on board is single seating and the cuisine is continental. Mid-afternoon tea and coffee is served every day on deck and in the lounge and there is a late evening buffet. The friendly, multi-lingual staffs cater to passengers’ every wish – and offer a high level of service with one crew member for every 2.5 passengers. FOUR SEASONS HOTEL DES BERGUES GENEVAdeberges-exterior

While we didn’t stay at the hotel (we hope to do that next time and review it), we did have dinner at its luxury restaurant: Il Lago and were duely impressed. The green and blue-tinted dining room, split in half by gilt French doors, is decorated with brocades, chandeliers, and sweeping hand-painted scenery is enchanting and the service is arguabley the best is Geneva. When Executive Chef Marco Garfagnini is on target (which is most of the time), the food is sublime.

Only the opening of the Four Seasons Hotel des Bergues succeeded in tempting Marco Garfagnini to leave his native Tuscany and his restaurant Ninan Eight years after opening it. “I needed a new challenge, he says.”

But not just anything. “I received a lot of offers, but had not accepted any of them when Mr Silva suggested I join in the launch of the Il Lago restaurant at the Four Seasons Hotel des Bergues. This is indeed a major challenge.” In Carrara, Marco Garfagnini had a team of half a dozen people; at the Four Seasons Hotel des Bergues, the kitchen staff number no less than 20 to 25.

This young chef of 36 already has an impressive culinary track record to his credit. After working up the ranks of his profession learning different skills in large Italian establishments, he went abroad to broaden his experience. He was deputy executive chef at the restaurant Il Carpaccio du Royal Monceau in Paris in the early 90s, and also worked at Harry’s Bar Exclusive Private Club in London. Later, as executive chef, he opened two restaurants of the Coco Pazzo chain in New York and Cleveland.

It was in 1998 that he returned to his native country, where together with his wife he opened a restaurant in the family home in Carrara. Honours then followed, and he gained his first Michelin star in December 1999. In 2002 he was among the five finalists selected for the title of Best chef of Italy, and in 2005 he won the Young Chefs trophy. At the same time he continued to hone his skills, working at the Four Seasons Georges V in Paris and with Martin Beratasegui in San Sebastian.

Marco Garfagnini’s cuisine is clearly of Italian – Mediterranean inspiration. He has a passion, both from cultural and personal preference, for pasta in all its forms. Not surprising, then, that it is under this heading that his most original creations can be found: tortelli with cheese, lemon and mint, and shrimp ravioli with crab
sauce. We dined during white truffle season and both Carnaroli risotto and Tagliolini freschi were ravishing and world class.

But above all Marco seeks to create the finest recipes. Some of the dishes have become “musts” like the Brittany Lobster Risotto and the wild sea bass. Risotto with lobster and basil, risotto with calamari and champagne, and tortelli with cheese, lemon, and mint are some of the northern Italian creations Carrara native has road-tested on diners then added to his menu. if seared scallops with wild mushrooms in a shellfish reduction or braised veal cheek with semolina gnocchi and asparagus are available, go for it.

If I were to select one plate that would be the chef’s signature, it would be Glazed goat kid, with roasted potatoes, purée of celery and green apple, which were in season. Cooked some 36 hours, the meat was bursting with flavor, amazingly moist and meltingly tender. A black cod creation was also excellent, if somewhat Nobuesque. In fact, our one criticism chef Marco’s style is the introduction of Asian influences that distract from his food’s innate purity: Something I am sure he will have corrected by our next visit.

The wine list is a joy and full of great bottles, as well as some interesting surprises. All desserts are recommended, especially La fraise, fraisier glaçé, croquant de meringue et rhubarbe (Strawberry, Iced strawberry cake, crunchy meringue and rhubarb) and Chocolat griottes,comme une forêt noire contemporaine (Chocolat cherries, as a contemporary black forest).

Getting There & Other Tips

Continental & Swiss (The former Swiss Air) offer frequent service from the States. From within Europe. Both Paris and Lyon make excellent Gateways and provide the opportunity to extend your holiday, in a different country.

Eurail TEE (trans-Europe-Express) service is dependable from Paris. The trip takes a bit over three hours, non-stop. Seats require reservations and can be purchases online at the American Rail Europe’s Excellent Website. (Senior Fares are available).

While cabs in Geneva are expensive, they are also clean, spacious and honest. The ride to the airport (about $30 to $40) is a bargain.

For snacks, don’t miss the many excellent Arabic restaurants, in the narrow streets above the Beau-Rivage, a colorful area in its own right.

For elegant shopping, stroll across the lake and you’ll find department stores and designer boutiques to your hearts content. Just about any cafe serves good pastries and wonderful coffee. 1947 is a vintage that is legendary
in the great Bordeaux wines
of the last century.

It was a year that was so hot and dry
that water was rationed all summer.
After early blossoming and a heat wave
during the summer, the harvests began
on September 8th.

The concentration and richness of
the grapes were such that the
fermentations raced on and often stopped
before complete. The wines are of
a generosity that has been rarely equalled.
At Sauternes, the rain on September
19th and 20th favoured the development
of noble rot, where the grapes were
picked at the beginning of October
without being sorted, grapes that were
overripe and of the highest quality.
We propose this legendary vintage via
chateaux that are just as mythical.

HURTIGRUTEN FORGES A PATH FROM THE MEDITERRANEAN TO THE BALTIC WITH THREE

NEW SPRING EUROPEAN CRUISES ABOARD WORLD’S MOST DELUXE EXPEDITION SHIP, MS FRAM

Hurtigruten is introducing three April itineraries of eight, 12 and 14 days that incorporate both ocean and river cruising, cumulatively forging a path from the Mediterranean to the Baltic aboard the 318-passenger MS Fram. The trio of sailings, which when combined make a 34-day voyage, includes an eight-day “Easter Cruise,” sailing from the Canary Islands’ Las Palmas to Lisbon, Portugal on April 8, cruising Spain’s only navigable river, the Guadalquivir; a 14-day “Spring in Western Europe,” departing from Lisbon to Hamburg, Germany on April 15, with visits to seven countries as the ship sails the Gironde, Seine, Thames and Elbe rivers; and a 12-day “Baltic Sea” April 28 sailing, embarking in Hamburg and cruising the Elbe River to the Kiel Canal, and calling at a host of Northern European capitals — Stockholm, St. Petersburg and Finland. Depending on itinerary selected, fares range from $2,479 per person, double to $10,849. A 15% space available discount reduces the fares to $2,107 to $9,222.

Two leisurely days at sea combine with five ports of call on the eight-day “Easter Cruise,” including Las Palmas, where travelers can get a dose of the island’s culture and architecture in the charming, historical Vegeta section which boasts the Santa Ana Cathedral, begun in the early 15th century and completed 350 years later. In Funchal, the 500-year-old capital of the Portuguese island of Madeira, guests will find a charming seafront promenade lined with restaurants and cafes, as well as a majestic Gothic cathedral. Cruising the river Guadalquivir, MS Fram sails into the heart of Seville, providing the chance to visit the Alcazar palace and garden complex that was first a Moorish stronghold and then of Christian kings; and the Cathedral of Seville, the largest in Spain. From Portugal’s Portimao, guests can embark on an optional excursion to Lagos, a fishing port once inhabited by Phoenicians, Greeks, Romans and Moors. Discounted rates range from $2,107 to $4,963 per person, double; normal rates are $2,479 to $5,839.

The 14-day “Spring in Western Europe” voyage from Lisbon to Hamburg offers one of Europe’s most extensive sailings, taking in highlights of seven countries while ensconced in a deluxe ship. Setting sail along Portugal’s River Tejo, the MS Fram makes its way to the country’s Leixoes at the mouth of the River Douro, and near the 12th-century port wine center of Oporto. Guests can take an optional excursion to Santiago de Compostela, the city said to be the final resting place of Saint James, from Spain’s La Coruna; and choose to visit some of Bordeaux’s more stunning vineyards and chateaux as the ship makes its way up the Gironde River. Next are the Channel Islands ports of Sark, the smallest of the island group featuring breathtaking coastal views and a pastoral interior; and Guernsey, whose landscape blends cliffs, beaches and a bustling harbor town. Other highlights include cruising the Seine River to Rouen, France, a cathedral city that has flourished since the Middle Ages; sailing up England’s Thames through the heart of London; calling at Antwerp, the northernmost province Belgium’s Flanders’ region; and exploring Amsterdam, with its romantic canals and Van Gogh Museum, housing the largest collection of paintings and drawings by Vincent Van Gogh. Discounted fares are $3,799 to $9,222 while normal rates are $4,469 to $10,849.

Roundtrip from Hamburg, the 12-day “Baltic Sea” sailing explores Northern Europe, plying the 61-mile Kiel Canal connecting the North and Baltic Seas. The MS Fram calls at Ronne, the capital of the Danish island of Bornholm; Stockholm, known as the Venice of the North; Finland’s capital, Helsinki; and Russia’s St. Petersburg, with its gilded czarist palaces and Hermitage, housing one of the largest collections of Western European art. Other destination highlights include the World Heritage Site of Tallinn, Estonia, featuring cobble-stoned streets, open-air cafés and the 13th-century Toompea Castle; and Visby one of the best-preserved European medieval cities located on the Swedish Island of Gotland. Discounted rates are $3,679 to $8,669; regular rates are $4,329 to $10,199.

Onboard Expedition teams educate and guide the guests with lectures, activities and daily programs. Optional excursions possibilities are extensive and can be pre-booked.
