othing is as festive as
Champagne and while all “sparkling” wine is festive and selections from
America, Australia and other countries can delight, only the real McCoy offers the”
wow” factor. Most Americans shun any wine with the word rosé in the title. But
in the Champagne world, rosé Champagnes command premium prices and, in my
opinion, are the crème de la crème.
A Surprise for the Eye and
the Taste Buds alike, Piper-Heidsieck® has produced rosé Champagne for as long
as the House has made wine. In October 2004, the firm will unveil its latest pretty-in-pink
sensation: Rosé Sauvage. Anchored by the same approach to blending as used for
the Cuvée Brut (incorporating fruit from 50 distinct crus), the rosé gains its
colorful extra dimension from a judicious portion of red still wine. The
intense pink color suggests a lively and generous wine; the aromas and flavors
fulfill that promise. Initial scents suggest Piper’s hallmark freshness, accompanied
by distinct cherry notes amid the fragrant backdrop of citrus. On the palate the
rosé expresses the slight acidity of red fruit, then mellows and lingers with hints
of strawberry, plum, blood orange and a welcome sensation of warmth. Like its
name, Piper’s Rosé Sauvage conveys a wild character, at once fresh and full of
vigor. But it also represents the ultimate in champagne refinement. Release

highlight
Spanish classic wines and unique food pairings
during 100th Anniversary Celebration/bigger>/bigger>

The delicate marriage of wine and food brings years of history and innovation.
In the case of the Columbia Restaurant, it starts with 100 years of food and
frolic which have been matched with its historic recipes and classic wines of
Spain for the entire year of 2005.
Richard Gonzmart, fourth-generation owner of the Columbia sees the current
passion for Spanish wines sweeping the nation as a tribute to what his family
has known all along. “My parents, and their parents, grew up with these wines,”
said Gonzmart, who also has created the largest Spanish wine list in the United
States boasting more than 500 varieties.
“My wife, Melanie and I, actually visited the Torres family winery in Spain
during our honeymoon 32 years ago, at the suggestion of my parents who had been
doing business with the Torres family for decades,” said Gonzmart.
The Columbia was awarded the prestigious “Best of Award of Excellence” from Wine
Spectator magazine in August 2004 and this month Wine Enthusiast
gave the Columbia their “Award of Ultimate Distinction” the only restaurant in
Florida to receive this highest of awards.
To showcase the wineries during the year, each month will feature the following
events:
• /fontfamily>Each month, the winemaker or
principle of the selected winery will be on hand in two or three of the
Columbia Restaurants in either the flagship Ybor City (Tampa), St. Petersburg,
St. Augustine, Sarasota, Sand Key (Clearwater Beach), Celebration (near
Orlando) or the newest location in West Palm Beach. These winemaker dinners range
in price from $50 - $100 per person.
• /fontfamily>Each evening, the Columbia will
feature a classic Spanish winery and offer a multi-course dinner for two, each
course paired with a wine of the vineyard for $100.
• /fontfamily>Throughout the month, the wines
will be offered by the glass.
• /fontfamily>A lunch special will be offered in
all Columbia restaurants, which includes a glass of wine from the showcased
winery.

The Columbia Restaurant of Tampa’s Historic Ybor
City was founded in 1905 and is the oldest restaurant in Florida, and the
largest Spanish restaurant in the world. Locations include the flagship
restaurant in Tampa's Historic Ybor City, St. Armand’s Circle in Sarasota, the
Historic District in St. Augustine, The Pier in St. Petersburg, Sand Key on
Clearwater Beach, Central Florida's town of Celebration and West Palm Beach at
CityPlace. All Columbia Restaurants are owned and operated by 4th and 5th
generation members of the founding family.
