2004 Elsa Cabernet Sauvignon

 

 

 

 

Vintage Description

The classic Cabernet aromas of black pepper, cedar and berry notes are evident in the nose. This is a medium-to-full bodied wine with a soft, balanced mouth feel and flavors that are similiar to the aromas. All of the above lead to a pleasing, soft berry-vanilla finish.

 

Winemaking Notes

 

 

The grapes of this single-vineyard wine come primarily from Valentin Bianchi's Dona Elsa Estate, situated in Rama Caida, San Rafael, Mendoza, around 760 meters above sea level. One of the coolest areas in San Rafael, the soil in Rama Caida is of sandy calcareous composition and alluvial origins. The grapes are hand-harvested and sorted two times (once before de-stemming and once after). Prior to maceration, 10%-20% of the juice is bled off (saignee) the skins to increase the skin to juice ratio. The must then goes through classical crushing and is fermented at controlled temperatures in stainless steel tanks and inoculated with selected yeasts. Very gentle, periodic pumping over is conducted, with seven days total maceration and natural stabilization. There is minimal oak aging in an effort to keep fruit fresh, lively and prominent, with a further one month's aging in bottle.

 

 

Serving Tips: Elsa Cabernet Sauvignon is the perfect accompniment to a wide range of foods, especially the steaks and beef that are typical of Argentine cuisine.

Composition/Blend: 92% Cabernet 8% Merlot

 

 

2004 Elsa Malbec

 

 

 

 

Vintage Description

The classic Malbec aromas of ripe plum and violets are evident in the nose, with hints of vanilla. The beauty of the Malbec in Argentina is its ability to combine a rich, weighty mouth feel with a soft silkiness normally associated with lighter wines. Elsa Malbec takes the promise of the nose through to the palate, with pleasing fruit that mimics the aroma. The soft, supple palate leads to a lingering finish.
