Ready for some simply savory food matched with a variety of new and original beers? Then head down to the East Village on Tuesday, July 29, 2008 as Chef/Owner Damien Brassel of Knife + Fork (108 East 4th Street, between 1st and 2nd Avenue, NYC, NY 10003; 212.228.4885; www.knife-fork-nyc.com) will be creating a 5-course tasting menu, pairing his inventive, modern European fare with Coney Island Lager’s unique selection of “freakishly good” beers. The beer dinner is $60 per person and will begin promptly at 8PM. The tasting menu will include:

House cured salmon with ginger, lemon, cilantro and fennel salad with seaweed compote and baby greens – Albino Python

Lemon thyme and tea cured Berkshire pork belly with white turnip puree, citrus salad with preserved lemon balm Vinaigrette – Sword SwallowerIt’s Vino Ver-Day!

In May 2006, Knife + Fork opened as the first solo venture for Chef/Owner Damien Brassel. Constantly endeavoring to make healthy food be simple, approachable and most importantly, taste good, Damien believes that the suitability and freshness of the ingredients is as important as the skill of the cook. “A salmon without a cook is better than a cook without a salmon”. Great cooking is not just the expression of a person’s genius imposed on a given product, but inventive cuisine is an art that requires a complete knowledge of traditional methods. Damien spends a great deal of time seeking out ingredients and finding the perfect blend of flavors. This combined with his use of various methods of cooking including poaching, slow cooking and smoking of meats has developed into his interesting yet approachable menu.

 

Coney Island Lager

Shmaltz Brewing Company of Saratoga Springs, N.Y. has introduced a new collection of beer that pay garish homage to Coney Island. Beers include The Sword Swallower, a steel-cut hop lager that has depth and bitterness; The Albino Python, a summery wheat beer that is light and refreshing with hints of citrus; and The Coney Island Lager, a pleasant Pilsener.
